This holiday season 2020 will probably be spent at home only dreaming of travelling the world.
So, inspired by the beautiful island of Sicily, we have prepared our favourite recipes to bring out the authentic flavour of mela olio extra virgin olive oil…and let your taste buds experience the Mediterranean!
Belle’s Bruschetta
Mix diced tomatoes with finely chopped Spanish onion and basil leaves, add salt to taste and add some mela olio, stir to combine and infuse the flavours. Toast slices of ciabatta bread under the grill or on the bbq and arrange on a serving plate. Spoon some tomato mixture over each slice, drizzle extra mela olio over the top and finish with cracked pepper and sea salt.
Rosanna’s Ricotta Dip
Spoon a cupful of fresh ricotta into a mixing bowl, add cracked pepper and sea salt and stir to smooth then transfer to a serving bowl. Drizzle with mela olio and pop a fresh rosemary sprig on top. Serve with Rosemary and Sea-Salt grissini breadsticks.
Emanuel’s Easy Steak with “Salmurigghiu”
Salmurigghiu is a traditional Sicilian dressing used when grilling meat. Combine 20ml mela olio with 10ml of lemon juice, add a teaspoon of oregano (fresh or dried) and a crushed garlic clove. Grill or barbecue 8 thinly sliced steaks, pour the mixture over the steaks and let sit for 5 minutes before serving. Salt and pepper to taste.
Chia’s Cherry Tomato and Mixed Leaf Mediterranean Salad
Combine halved vine ripened cherry tomatoes with roughly hand torn mixed lettuce leaf in a bowl. Drizzle with mela olio and balsamic vinegar, add sea salt flakes and cracked pepper and toss gently.
